Paneer and pineapple combination is one of the fabulous one,I love pineapple for its multiple health benefits.It"s just a fruity and cheesey version of regular ragda Pattice,available at any corner of Mumbai:)

Ingredients
  • For Tikkis:
  • For Cover:
  • 1/2 kg potatoes(boiled and mashed)
  • 2 tea spoon corn flour
  • 1/2 tea spoon turmeric powder
  • salt as per taste
  • for stuffing:
  • 1/4 kg malai paneer/ ricotta or cottage cheese(crunbled)
  • 1/2 cup canned pineapple(drained and sliced)
  • (You can also take fresh pineapple if wish but it must be very sweet.)
  • 2-3 green chillies or as per taste(chopped)
  • salt and crushed pepper,as per taste
  • Cornflour for dusting
  • oil for grilling
  • For Ragada:
  • 1/4 kg dry yellow peas(over night soaked and boiled up to 6-7 whistles)
  • 1 cup fresh pineapple juice(strained)
  • (if you are using packed pineapple juice,avoid sugar)
  • 1 cup water
  • 2 tea spoon lemon juice
  • 1 tea spoon white or brown sugar(I prefer brown)
  • Pinch of turmeric powder
  • 1 table spoon oil
  • Salt as per taste
  • Red chilli powder
  • chat masala
  • fresh coriander(chopped)
Method
1.

For Tikkis:
Mix the ingredients of stuffing and refrigerate till used.Mix ingredients for cover and make chapatti like dough.Make lemon sized balls and flatten on your palm,spoon stuffing and make flat tikkis,lightly dust with cornflour and on a hot griddle roast on both sides by applying little bit of oil.(handle carefully)

For Ragada:
In a pan,heat oil and add boiled peas,turmeric and mash with back of the spoon.add sugar,water and bring to boil,add pineapple juice,salt and simmer for 5 minutes,put off the gas and add lemon juice.

For Chat:
In a deep plate or soup plate add ragada,keep the tikki in the center and sprinkle,red chillipowder and chat masala,acc to your taste.Garnish with fresh coriander.....Serve hot:)

Note:
1.you can enjoy Tikkis,alone with mint coriander chutney,ketchup or spicy salsa,tastes devine.
2. you can also make paranthas using the stuffing of tikkis,but add little bit of process cheese also with it.
3.you can also make samosa using this stuffing,but add fresh mint to it for more taste.

i had made so many sweets using this combination but in rainy season we have yarning to have something sweet,sour,yummy chats,so i tried this one:)
