Rice Panki is a traditional dish from the Gujarati households.Rice flour pancakes steamed in between banana leaves, are,low cal,good 4 all age group,good 4 any get together.You will just go made with the aroma of banana leaf :)

  • Rice flour, sieved 1/2 cup
  • Skimmed milk yogurt 8 tablespoons
  • Salt to taste
  • Green chilli paste 1 teaspoon
  • Ginger paste1/2 teaspoon
  • Finely chopped onion one
  • Soda bicarbonate 1/2 teaspoon
  • Banana leaves cut into 4 inch squares or circles 8

Take rice flour in a bowl,add yogurt, salt ,green chilli paste, ginger paste ,chopped onions and mix.


Add water as required to adjust batter to a pouring consistency,add soda bicarbonate and mix.Set aside to ferment for about two hours.


Take banana leaf pieces.Pour the rice batter on one banana leaf,cover with another leaf.Place it on the non-stick tawa and cook.Turn and cook the other side similarly.


Serve in the leaf itself.Serve with corander chutney.Can b packed in lunch box.You can add any greens / veggies of ur choice.Avoid chillies for kids.


Vegans use thin coconut milk ,instead of curd,it will enhance d taste also,or can use plain water ,along with 1/2 tsp of citric acid.
