POLI means chapatti,but when something stuffed inside it it is called PURAN(sweet stuffing) POLI,Traditionally Boiled gram lentil and jaggery,cardamom powder mixture is stuffed inside it,and known as "Puran Poli" in Maharashtra,"Holige" in Karnataka and "Bobbatlu" in Andhra Pradesh.Traditionally refined flour is used for making dough,i used whole wheat flour,if any one is gluten resistance,can replace it with sorgham flour / quinoa flour / oats flour / amarnath flour /buck wheat flour / mix of any of this too.I tried stuffing with pruens,apricots and walnuts.....hope you will like it.

Ingredients
  • for Dough:
  • 1 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cardamom powder
  • salt to taste
  • low fat milk as needed(Vegans can use water instead of milk)
  • Dry flour for dusting as needed
  • For Stuffing:
  • 50 gram prunes(chopped)
  • 50 gram black seedless dates(chopped)
  • 50 gram golden apricots(chopped)
  • 100 gram roasted walnut(powdered)
  • 50 gram plam jaggery(Powdered)
  • 1/2 teaspoon saffron
  • 1 /2 teaspoon cinnamon powder
  • 1/8 teaspoon maze powder
  • 1/8 teaspoon nutmeg powder
  • Ghee Or Oil(for Vegan)-as needed
Method
1.

For Dough:Mix all ingredients,except milk and make semi soft dough using chilled milk (vegans can use water,instead of milk) and cover with damp muslin cloth for 15 min.

After 15 min,stretch the dough with hands and punch it,make small lemon size balls,roll two little thick puris and on one puri place the stuffing and cover with another puri,seal the edges properly,roll out medium size chapatti of 1/2 inch thickness by using dry flour.

3.

On hot tawa or griddle roast the poli,on medium flame from both sides,applying very little ghee or oil.Cut and serve HOT.....with plain yogurt or rabbadi or basundi or as it is with lemon pickle...:)))))))

For Stuffing: In a bowl mix all ingredients,keep covered for 10 min,so that everything will blend well.

NOTE: You can use this stuffing as stuffing for sandwich or bun or as bread spread by mixing 1-1 teaspoon of honey and lemon juice to it.
