Call them Cookies, or biscuits or Ginger nuts - Gingersnaps are as delicious from one version to another. No wonder they are considered one of American favorite snacks. Although made all year round, gingersnaps hold a special place during the Thanksgiving season. I especially love them with Milk! The variations that I have come across for these Ginger cookies are mind boggling. Since I make them so very often, I wanted to go for a healthier version which will not make me guilty about gorging them down ( Now you are smiling! But believe me once you take that first bite, I am sure you will indulge in gluttony too! I will be the one to laugh when that happens!) hence I combined few basic gingersnap recipes and modified a wee bit more to incorporate healthy ingredients.
I will call this picture "Crunch with every Bite" and Yes! I have reasons for calling them so. I really understood the meaning of the proverb "When the cat is away, the mice will play" recently. How? Well here's the story. I had very charming and little guests coming over to my place and so I thought I will make these cookies for them. While their mother had to pop out for something urgent, I made the two little ones sit in the drawing room to watch cartoons while I busied myself baking the goodies. When it was almost done, I took them out to cool and told them not to touch them yet till I take photos. I arranged the cookies likewise and last minute remembered that my tripod was in the Garage and asked them to sit tight while I go down and bring it up. 5 min later, I came and saw everything looking supposedly fine although my cookies looked little out of place. Upon notice, I checked v v small bites in the end of each cookie! Then the story comes out that, the two little geniuses had bitten a little bit of every cookie so that I don't notice anything missing! hahaha! I laughed like never before. You should have seen their faces! Children! How much more can we learn from them?
In a large bowl sift and mix together the dry ingredients.
In another bowl mix the wet ingredients and whisk till completely dissolved.
Now mix both till completely blended and preheat Oven to 350F
Roll out the dough in your hand into small balls and then cover them with cinnamon sugar
Place them in baking sheet and give them a light press with the bottom of a glass tumbler.
Bake them for 10-15min till the edges turn brown. Cool them for 10-15 min when they will harden and get crispier.They taste better and better with time.
