Well I use egg whites to substitute whole eggs - fewer calories and more protein. But in this recipe I think it is added for added richness. Just add in more milk instead :) Hope this helps :) --DK

Self rising flour is nothing but all purpose flour added with soda and salt. For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt. Lemon zest is nothing but grated peel of lemon - just grate it lightly - too much will make it bitter. Just the surface :) --DK

Once you start making them, you find that they are so easy!You can always prepare the dry ingredients together the previous day and just add the wet in the morning! Makes life a little easier in the morning :) --DK
