Healthy Quesadillas with Black Beans and Mango
I was going through my drafts when I realized that this was one recipe I had meant to post long back. Actually right after I had posted my Black Beans and Mango. I had leftovers and this was how I had finished it. It was so delicious that I immediately took some photos of it to be posted the very next day. Oh well. Though I might be 2 months late, it is still an excellent dish for this season cos I still see the mangoes in the stores. Its the fag end I know and I am buying a carton every week I visit my Farmer's market. It especially makes a great lunch. Light, filling and refreshing. There is wholegrain, protein and a fruit. A glass of vegetable juice and you are in excellent state :)
Healthy Quesadillas with Black Beans and Mango
Even if you do not have leftovers, this can be easily put together specifically for this dish too. If you are not up to the "soaking-then-cooking-beans" ritual, you can use the canned version. Refer to my "Tips" section for the details. Its easy and takes only about an additional 10 minutes. Make sure to drain and rinse the beans well before proceeding with the recipe. The amount of cheese will vary depending on the "leftovers" and on the current "diet" you are on (!!), hence I have not tried to quantify the ingredients. I am kinda miserly towards cheese (and I guess it shows in the pictures) but very generous with the beans and that's how I made mine :) Play with the ingredients, this dish stands up to it very well.   • Serves: 2 people
  • Yields: For 1-1/2 cups of leftover beans, I made 2 large wraps
  • Leftover Black Beans and Mango (see Tips)
  • Wholegrain/Wheat/Flour Tortillas
  • Grated Cheddar Cheese, as required
  • Grated Monterey Jack Cheese,as required
  • Grated Mozzarella Cheese,as required
  • Chopped Cilantro to garnish, optional
If you do not have leftover filling, this can be easily put together with store bought canned beans. Heat the Black beans with the spices mentioned in the Black Beans and Mango until warm. Chop some mangoes to it and then continue with this recipe. Takes an additional 5-10 minutes only.
1. Spray a baking pan lightly with PAM spray. Place the a tortilla on it. Spread some of the black beans and mango mixture on one side.
2. Spread some of the cheese on it. You can add cilantro if using.
3. Bring the other side and close it to form a semi circle.
4. Lightly spray some PAM on it and place it under a broiler for 2-3 minutes or until the cheese melts.
5. Cut it into half and serve warm.
They are good on their own, but you can additionally squeeze some lemon juice, add Tabasco sauce, add guacamole etc as per choice. A hearty and quick lunch the next day with leftover beans and mango. Healthy Quesadillas with Black Beans and Mango

Namaste! I'm from Mexico, and quesadillas are always a fast way to get a no-meat dish at home or everywhere. A hard task to do is to eat at the same time with other people that eat meat in Mexico, is very dificult to get two dishes ready. Here quesadilla comonly is filled with Queso (cheese :)) and tortillas are easy to find down the corner on the "tortilleria" or grocery store. But this recipe means a great difference between saved of a hurry and delicious hurry :) thanks! :)
