Toss the cubed mangoes, strawberries and sugar in a medium bowl.
Cover and let stand until the fruit gives off some juices, about 90 minutes. I think it would be easier if you could prep this the previous night, refrigerate it in order to enjoy in the morning. Since every time I made this, it was for Sunday brunch, I haven't tried doing the advance prepping yet.
Meanwhile, whisk the flour, sugar, baking powder and salt in a large bowl to combine.
In another bowl mix the melted butter, milk, eggs and coconut milk.
Now slowly add the dry ingredients to the wet .Whisk gently just until smooth;
Do not over-mix. Its more like folding than mixing.
Now prepare the waffles as per your waffle maker's instruction and cook accordingly.
