Khandvi...a famous snack of Gujarat,made from chickpea flour,I tried to make a newer version of it...just try it ....:)))))))))))))))))
For Batter:Mix all ingredients of batter and keep aside.
For Stuffing:In a pan heat oil and add all ingredients in a given order and saute in between.Cool it and keep aside.
On butter paper,place bread slice,apply some green chutney and some dates chutney.Spread a thin layer of stuffing evenly on it,now with light hands roll it and seal the edge with chutney.
In a pan heat oil,add mustard seeds,when it crackle add curry leaves and sesame seeds and now place the rolls,after coating in batter,in pan.Cover and cook for 2-3 min on low flame,slowly turn and cook from other side too.
Cut and garnish with scraped coconut and serve hot...no need for any extra accomplishment with it....:)))))))))))))
NOTE:My VEGAN friends can use TOFU in place of PANEER.
NOTE: It can be made without stuffing too,but then do add chopped green chillies in tempering and apply chutney inside the roll.
NOTE: You can make variations in stuffing,sky"s the limit.:)
NOTE:A very important thing to note is that bread must be very fresh,if you have little bit hard bread then wrap it in a muslin cloth and steam it just for 3-4 min and then use it.
