Handvo is a traditional Gujarati savory cake. Very tasty n healthy too.Trditionally it is made in deep pan, by tempering, pouring batter over it n covering d lid.allowed 2 cook on slow flame 4fm both side.You can say it is a , whole meal as contains everything,grains,lentils,dairy n veggies.You can add vegggies of ur choice n adjust d... chillies acc 2 ur taste:)
Wash and soak the rice and dals together for 4 to 5 hours,drain and keep aside.Grind to a paste, add the sour curds and allow to ferment overnight.
Add the grated pumpkin, 4 tablespoons of oil, lemon juice, soda bi-carb, sugar, chilli powder, turmeric powder, green chilli-ginger paste and salt and mix well.Pour this batter into a greased tin or a thali.
Four the tempering, heat the oil and add the mustard seeds and fry until they crackle. Add the sesame seeds, ajwain and asafoetida and continue to fry. When the sesame seeds are golden in colour, pour this over the batter.
Bake in a preheated oven at 200 degree C (400 degree F) for 30 to 35 minutes till the crust is golden brown.Cut into d square pieces n serve, with any sauce or chutney.Curd dip goes well with it:)
Can b packed in lunch box too.good 4 any party ,occasion, or if u r in a hurry make it n u r sorted:)
Note:
Vegans can avoid curd and use lemon juice or citric acid.
my mom,she is making it since ma childhood n that taste divine.her method of making handvo calls 4 too much oil, so i baked it ,as we people are now not able to digest too much oil:dthx mama:)
