Zucchini or courgette belongs to the Squash family. It is commonly used in America and Europe.Ihis delicious dip can be served with any snacks,nachos,chips,munchies:)

Ingredients
  • 2 tablespoons oil
  • 1 onion, diced
  • 3 or 4 green chillies more or less to taste
  • a few curry leaves
  • 2 garlic cloves, roughly chopped
  • 1 tablespoon roughly chopped ginger
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 zucchini, diced
  • salt, to taste
  • water, as needed
  • 1 teaspoon lemon juice
Method
1.

Heat oil in a wok or kadai over medium heat. Add onions, green chillies and curry leaves. Saute until the onions are translucent.

Add garlic and ginger and saute for a few minutes.Reduce heat and stir in turmeric powder and red chilli powder.

Add the diced zucchini along with salt to taste and saute for a few minutes.Cover and cook on medium low heat for around 5 minutes until the zucchini pieces are soft and cooked.

4.

Stir fry for a few more minutes and remove from stove top.Cool and grind everything into a fine paste adding very little water as needed.Sprinkle lemon juice on top for an extra kick.
