This soup is full of proteins and minerals and fibre as it contains the veggies and lentils and freshness of mint and fresh white fig,which blends so amazingly with the lentil and veggies.A dream come true for any mother or Person who are on diet:)

  • Yields: serves 4 person
Ingredients
  • 1/2 cup red lentil / toor dal(boiled and pureed)
  • 1/2 cup spring onion (chopped)
  • 2 stalks of fresh coriander (chopped)
  • 1/4 cup carrot (chopped)
  • 1/4 cup ash gourd (chopped)
  • 1 tablespoons wheat flour
  • 2 teaspoons madras curry powder
  • 2 fresh white figs (chopped)
  • 4 table spoon rice / any wheat pasta (boiled)
  • Juice of 1 fresh lemon
  • 1 tea spoon fresh mint juice
  • 1/4 cup oil / butter for kids
  • 1 tea spoon mustard seeds
  • 1/2 lit.filtered water
  • salt and pepper to taste
  • Pinch of turmeric powder
  • Fresh coriander (chopped)
Method
1.

In a pan heat oil / butter and mustard seeds,when it splutter add onions,coriander stems , carrot ,ash gourd and figs.Add flour and saute for 5 more minutes.Keep aside,cool and puree all.

In a deep vessel add above puree,turmeric powder and water and bring to boil,add pureed lentil,mint juice, curry powder,salt and crushed pepper.

Add boiled rice or pasta and lemon juice, serve hot.garnish with fresh coriander or low fat cream or whatever you fancy:)

actually soup is not the part of traditional indian cuisine,but we indian love lentils,grains ,veggi"s most and make our regular meal using some thing or other.though today"s young generation love soups and salads for their health benefits,so i thought why not to make a delicious and healthy dish,which can be loved and savourd by all age group:)
