A tangy, mild salsa with tons of flavor. Great wherever you may use salsa such as tacos, corn chips or burritos. It also makes a zesty low-fat salad .......:)

Ingredients
  • For Salad:
  • 4-5 slices fresh pineapple (chopped)
  • 4-5 cherry tomato (chopped)
  • 1/4 cup red pimento (chopped)
  • 1/4 cup shallots (chopped)
  • 1/4 cup spring onion greens (chopped)
  • 1/4 cup capsicum (chopped)
  • For Dressing:
  • 1 teaspoon fresh lime juice
  • 1 teaspoon sugar / sugar free powder
  • 1/2 teaspoon crushed pepper
  • 1/2 teaspoon sherry vinegsr
  • 1/2 teaspoon red chilli flakes
  • 1/2 teaspoon green chilli (chopped)
  • 1/2 teaspoon extra virgin olive oil
  • salt as per taste
Method
1.

For Salad:
In a large glass bowl mix all ingredients and chill till use.

For Dressing:

In a small glass bottle mix all ingredients and refrigerate.

3.

Assembeling:

First shake the bottle of the dressing.

Pour dressing into the salad , mix with 2 forks.

4.

NOTE:
Mix dressing,1/2 an hour before serving.
