Kebab is a Navabi dish from Lukhnow.In my kebabs, there is a secret ingredient "Pureed Sweet n Sour Mango Pickle:).It gives xtra zing to the kebabs.You can also substitute this pickle with pickled lemon puree, if you prefer xtra tangy taste.

Ingredients
  • 200 gram paneer(grated)
  • 50gram roasted chana(powdered)
  • 50 gram roasted cashew(crushed)
  • 50 gram potato(boiled and mashed)
  • 50 gram carrot(grated)
  • 25 gram french beans(finely chopped)
  • 25 gram green peas(crushed)
  • 25 gram bread crumbs(dry)
  • 10 gram pureed sweet and sour mango chutney
  • 10 gram red chilli powder
  • 5 gram chat masala
  • 5 gram cumin powder
  • 5 gram pepper powder
  • 5 gram ginger(grated)
  • 5 gram garam masala
  • 2 gram kasuri methi
  • 2 gram dry mint powder
  • 1/2 tsp sugar
  • Salt as per taste
  • Poppy seeds as required
  • Oil / butter for basteing
Method
1.

In a deep vessel, add all ingredients and mix with light hand.Keep in refrigerator for half an hour for marination.

Bring mixture out of the fridge and divide into 8 equal portions.

Take each portion and press around a skewer in a cylindrical shape,and coat with poppy seeds.

4.

Keep in the non stick baking tray and baste with oil or butter.Bake in the preheated oven at 180C for 15 minutes.

5.

Bring back from oven and again bast with oil or butter and bake for another 5 minutes.

6.

Servehot with salad, mint coriander chutney and curd.Or with any sauce of your choice.I served with ketchup, as I found it handy:)
