A very simple but different preparatio of Okra,a side dish that goes well with any menu.

Ingredients
  • 500 gram lady's finger (sliced in slant)
  • For Marination:
  • 1/2 cup hung curd
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon lemon juice
  • 1 teaspoon red chilli powder or as per taste
  • 1/2 teaspoon garam masala or as per taste
  • 1/2 teaspoon dry fenugreek powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon sugar
  • salt to taste
  • For Tempering:
  • 1 tablespoon oil
  • 1 teaspoon shah jeera (black cumin seeds)
  • 1/4 teaspoon nigella seeds
  • 1 dry red chilli (torned)
  • 1/4 teaspoon turmeric powder
  • 1 green chilli chopped or to taste
  • 1 onion (diced)
  • 1 capsicum (diced)
  • 1 green tomato (diced)
  • 1 red tomato (diced)
  • For Spices:
  • 1 tablespoon dry coriander powder
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chilli powder or to taste
  • 1/2 teaspoon tandoori masala
  • salt to taste
Method
1.

For Marination: In a bowl mix all ingredients of marination and add okra and mix well,keep covered for 10-15 min.

For Tempering: In a pan heat oil and add all ingredients of tempering one by one in a given order,swat in between for a min,after adding each vegetable.

Now add marinated okra and mix well,cook for 5-6 min on low flame,don"t cover it.When okra tends to soften add spices and mix well,cook for a min,put off the flame.

Serve hot with rice ,chapatti or nan...choice is yours.....:)

NOTE:Vegans can avoid hung curd,though taste will not differ much but yes it"s creamy texture may differ,but it"s ok ,no one have to stop cooking due to some or other restrictions.
