
Another one of my fav. recipes during my DETOX diet was this – Artichoke and Spinach dip. Its one of those 5 minute meals especially when you happen to have a canned artichoke hearts on hand. Few vegetable crudites and toasted wheat bread along with it actually made an excellent light lunch for me. Such type of recipes are the ones which don’t make me feel that I am on a diet – even if its only DETOX. It hardly has any steps for me to show. The ingredients are approximate since you can change it to suit your taste preferences. Serve it as a light meal or as an appetizer, it is as healthy and wealthy as it can get. Now to the recipe
Method
Clean the hearts well, if using canned ones

Now add the rest of the ingredients (except olive oil ) to a blender

run the blender and pour down Olive oil just enough to make it into a dip consistency.

Serve with dry toast or with vegetable crudites. Wonderful finger food and all done in a jiffy! The kitchen is still clean at the end of it all

I love to have artichokes steamed or roasted, never tried making a dip, love the color
