Vegetarian Black Bean burger recipe
The minimal cooking in my kitchen continues. Deadlines after deadlines is squeezing out all the energy in me that I am left with none to take photos. Yes, you heard me right! Not for cooking, but for taking photos. Cooking is therapeutic and I need that time to take my mind off other things - its a way of relaxing for me! But I seem to have lost the patience lost the time which made it possible for me to take photos. Quick cooking with minimal ingredients that I can find in my kitchen are ruling the roost. That's how this Burger comes out today in the post. Soaking some beans is a normal practice for me. I always soak some type of bean or the other - thanks to the protein source it provides. I use them in stews, with rice, soups, salads etc.

So after enjoying some salad for dinner the previous night, I had some leftover beans in the fridge. I also had some leftover rice from dinner and hence thought of making these Grilled Black beans. I had seen a similar recipe at Food Network like ages ago and thought I will use ingredients I have in the fridge. I bought some burger buns (topped with seeds) on the way back from work and made these yummy burgers for the night. It took only about 15 minutes totally with leftover ingredients. You can use Charcoal grill, gas or a stove top grill for making these. You can refrigerate these patties in the fridge for 2-3 days (provided you use fresh ingredients instead of leftovers like me!) or freeze them longer for say 1-2 months. There are no fixed rules for these - just use ingredients you have on hand or like. Similar Recipes : Baked Falafel Burgers, Vegan sloppy Joes, Baked Quinoa and bean croquettes
  • Cook time:
  • Prep time:
  • Serves: 4 people
  • Yields: Makes 8-10 depending on the shape
Ingredients
  • 2 cups cooked black beans (or use canned)
  • 1 cup leftover cooked rice (use medium white rice or short grained brown rice)
  • 1 onion,chopped
  • 2-3 scallions, whites and greens chopped
  • 2-3 garlic cloves, minced
  • 1 tbsp cumin-coriander powder
  • 1 tsp dried oregano (or use fresh if you have on hand - You can use Italian seasoning blend too)
  • generous sprigs of cilantro, chopped (I used like a cup or so, since I love the herb)
  • salt to taste
Method
1. Drain the beans of any cooking liquid and mash it well with a potato masher or back of a spoon.
2. In a skillet with 1-2 tsp oil saute the onions, scallion whites, garlic along with salt and spices. Add dried oregano/Italian seasoning if using now. Saute until soft. Add any heat if you desire - green chillies, Tabasco etc
3. Add this mixture along with rice to the beans. Mix well until blended together - hands are your best tools for mixing. Add the herbs. You can do a taste test and see if it needs more salt.
4. Now take a small amount of the mixture and shape into patties.
5. Grill each patty over hot coals or on a stove top grill until lightly browned on both the sides. I grilled my buns on the side lightly too.
Serve these patties inside the grilled buns topped with cheese slices, onions, tomatoes, greens etc of your choice.  While I enjoyed them with just cheese and burgers, My husband preferred it with some red onions slices, double cheese and tomatoes. Very hearty, very filling, very simple and easy  and of course - needless to say - immensely nutritious. :) Vegetarian Black Bean burger recipe

I made this recipe yesterday, it was amazing!  My husband buys the frozen burgers, which I hate! He loved them.  I find burgers a bit dry to eat, so i added the spaghetti sauce in my burgers as a dressing in it!  it was delicious.

Hi,

I tried out this recipe. Only difference is I used sprouted rajma instead of black beans. Taste was good.

Thanks,

Jyothipriya

@Lozax - I made these and used Ener-G Egg Replacer (available at most Wal-Marts in the baking aisle, and certainly other food retailers) for the equivalent of 1 egg and they held together very nicely! Keeps it vegan and keeps the burgers in one piece.

This looks great! I too usually have some beans around -- I love the nutritional value, and the ease of preparing them. However, I've been boring myself lately of the beans, and need something new to try out --- this might do the trick!

Hey, tried this recipe with horse eyed beans and no rice and it turned out awesome. I mean it's such a fab replacement for potato tiki in burgers and healthy and easy too. Thanks :)

Just stumbled on your website and I'm so excited to find another site that offers vegan/vegetarian recipes. How can I find the nutritional values on your recipes? I'm trying to lose weight, and calorie counting, unfortunately, is needed.

I wish I cud really help you in this- but unfortunately I am not nutrition expert hence dunno to really be precise with every one of my recipes. But see if this link helps - http://caloriecount.about.com/cc/recipe_analysis.php?process=resubmit&count=46 --DK

These look delicious and I love how the beans have given them a black hue. Much more interesting and exotic than regualr veggie burgers.
