Every year brings new set of challenges. This year sees me embarking on a new journey that I have been promising myself to embark on for ..err..well, ever since I remember but never took.  Just like anything new, its frustrating, its extremely difficult and I am still working out the process. But its a journey for ME, for myself and its high time I did it after all. With a substantial chunk of daylight hours spent outside the house every day, I find completing my daily household chores a daunting task.  I am still in the frazzled stage trying to get my task done, hoping I will soon get to fine tune all the details. My hobbies have taken a back seat especially Chefinyou. But I am cooking as always. But now my cooking is that of the "get done soon" variety.

In my opinion, fusion cooking works best for these types.  Like this idea from Tarla Dalal. I can entertain not only my family but also friends making them feel important without actually having to slog my hours or use fancy ingredients.  Both the dudes LOVE this Pav bhaji fondue and its on a repeat recipe list. Its extremely customizable. If you like more onion flavor, increase it. Favor tomatoes? Throw in additional tomato. Can't live without heat? Bump up the Pav Bhaji masala and chilli powder.  If tomatoes are tart, throw in some sugar. On a diet? Substitute Coconut oil and skim milk for the butter, regular milk and cream. Just make it your own, but bring out the fondue pot to make it all look and feel special. :)

  • Serves: 3 people
  • Yields: Makes around 1.25 cups.
Ingredients
  • 1-1/2 tsp Pav Bhaji Masala, or as needed - see Tips
  • 1 tbsp Butter
  • 2-3 cloves Garlic, chopped
  • Abt 1/2 cup chopped Onions
  • Abt 1/3 cup chopped mixed Bell Peppers (or just single color)
  • 1 large (abt 3/4 cup) chopped Tomatoes
  • 1-1/2 tsp Chilli powder, or to taste
  • 1/2 cup grated vegetarian Mozzarella Cheese, or see Tips
  • 1/4 cup Milk
  • Salt to taste
  • 1-2 tbsp Cream
  • Homemade Pavs or store bought , see Tips
Tips
1. Cheese: Mozzarella is my personal choice but you can use any processed cheese that melts well.
2. Bread: You can use dinner rolls instead or any kind of bread of your choice. I use Whole Wheat Dinner rolls for this recipe. Herb breads are great as well. If Gluten Free, opt for non wheat breads.
3. Pav Bhaji Masala: Depending on the brand, Pav bhaji masala might be little different from what I used. So you can adjust the quantity depending on your requirements and taste.
Method
1. Heat a pan and heat the butter. You can use Coconut oil instead. Saute the onion along with garlic and salt until aromatic.
2. Add the bell peppers and sauté  for 2 minutes.
3. Add the tomatoes and stir for 1-2 minutes.
4. Add  little water and medium flame for 2 minutes
5. Add the pav bhaji masala and chilli powder,
6. mix well and cook on a medium flame for 1 minute, while stirring occasionally.
7. Allow the mixture to cool slightly and blend
8. in a mixer to a smooth puree.
9. You can at this point transfer this puree to your fondue pot (with the flame on, if serving in few minutes).
Note: If you do NOT own a fondue pot, use your saucepan instead to do the rest of the procedure.
10. I add the milk to my blender and give it a whirl
11. and pour it to my fondue pot. You can instead add the milk directly as well.
12. If you are going to be serving soon enough, add the cheese.
13. Keep stirring until melted and the mixture is thick. You need it thick enough to coat the bread/croutons.
14. I toast the bread in little butter until browned. I use the same pan where I sauteed the onion tomato mixture for the bread to pick up any flavors from the pan. Kinda same as the Pav Bhaji concept.
15. I cube them to make croutons.
16. Add the cream to the fondue and
17. get dipping :)
Spiced Indian styled fondue all ready to be served. This taste best served fresh and hot as and when its made.

It is such an amazing fusion dish. I like the twists you have given to this dish and the ease with which you have explained it clearly. The step by step pics do not leave anything out. Thanks for sharing such a great recipe. I am going to make this instead of my normal pav bhaji next time.
