Bhelpuri is a snack synonymous with the beaches of Bombay. Bhelpuri stalls are ubiquitous in the city as well as in the countryside.Bhelpuri is the most delicious food of Mumbains.

Ingredients
  • For Bhelpuri:
  • 250 gram puffed rice (kurmura)
  • 50g onions (chopped)
  • 50 gram tomatoes (chopped)
  • 50 gram potatoes (boiled and chopped)
  • 50 gram sev puri (crushed)
  • 50 gram nylon sev
  • 50 gram fresh coriander (chopped)
  • 10 gram raw mango (grated) (if in season)
  • 50 gram spicy green chutney
  • 50 gram sweet n sour date n tamarind chutney
  • 10 gram chat masala
  • 5 gram red chilli powder
  • 5 gram black salt
  • 5 ml lemon juice
  • salt to taste
  • For Spicy green chutney
  • 1/2 bunch coriander (cilantro) leaves
  • 1/2 bunch mint leaves
  • 2 big garlic cloves
  • 10-12 green chilies
  • Salt to taste
  • For sweet n sour Date n tamarind chutney
  • 1/2 cup pulp of dates (soak dates in hot water for 1/2 hr , grind them and strain)
  • 1/4 cup tamarind pulp
  • 1 tablespoon jaggery or sugar
  • 2 teaspoon chili powder
  • 2 teaspoon cumin seeds
  • For Chat Masala:
  • is a mix of spices consisting of amchur (dried mango powder), cumin seeds, black salt, coriander, dried ginger, fennel seeds, black pepper and red pepper.
Method
1.

For Spicy green chutney: Wash n grind all ingredients in a smooth paste,can be stored in refrigerator for a week.

For Date n tamarind chutney: Mix all ingredients n grind to smooth paste,transfer to the pan and bring 2-3 boils or till little bit thick,can be stored on self for 15 days or in freeze for a month.

For Bhelpuri: Mix all ingredients for bhelpuri in a large bowl,with light hands and serve immediately .

NOTE:This two chutneys are must for any Indian chat,so you can make and preserve in advance,can be used as marinaed to your barbequed paneer or potatoes an can be used as spread for bread,sandwich or frankies.

NOTE:One can adjust,spices and chutneys ,as to their taste too.I had given on random basis.
