Mishti Doi is a Bengali dessert. Mishti means sweet and Doi means yogurt.Bengal is a part of East India and Bengali''s are very famous for their sweet preparation. A Bengali meal never ends without at least a spoonful of mishti doi.

Ingredients
  • 500 ml full cream milk
  • 4 tablespoon sugar
  • 1/2 tablespoon yogurt
  • 1 tablespoon saffron milk
  • 20 gram pistachios (finely chopped)
  • For Serving:
  • earthen pot
Method
1.

In a heavy bottom pan,add milk,when it started boiling then add sugar and saffron milk and boil till,reduce to half,on very low flame,stirring constantly.

Take out of flame and let it become lukewarm,then add the yogurt and chopped pistachios,mix well.Pour the milk over the earthen pot.

Keep the pot in a cool dry place, and let the yogurt set over night.Refrigerate the set Mishti Doi and serve as a dessert.

NOTE:If you want to make it in traditional way then avoid saffron and pista and add 2 tablespoon sugar while boiling the milk and when it reduces to half add (Take the remaining sugar with 2 tablespoons of water and heat till the sugar melts and attains a golden brown color)the molten sugar over the milk and boil for another 15 minutes over low flame.Add yogurt and set over night.

NOTE:Wash ans soak earthen pots for 4-5 hrs,in tap water,and then use it.

NOTE:you can add any fresh fruit pulp to the reduced and cooled milk to make it fruit flavored.

traditionally mishti doi ,has the light brown color due to addition of caramelized sugar in it ,but i made it with little bit twist,just the addition of some saffron and pistachio,n hope fully it taste nice too.
