A multi grain bread ,made by using sesame seeds,sunflower seeds and watermelon seeds,a very simple and nutritious bread,goes well with any veg ,gravy or tea and coffee,I made it for Sunday brunch as I want to serve ma family and friend something nutritious along with other calorie full delicacies :)))))))))))

Ingredients
  • For Preparing yeast
  • 1 package dry active yeast
  • 1/4 cup luke warm water
  • 1 teaspoons sugar
  • 1 teaspoon flour
  • For Adding:
  • 1 cup soy milk
  • 1 teaspoon honey
  • 1/4 cup olive oil
  • For dough:
  • 2 cup whole wheat flour (genhu atta)
  • 1/2 cup all purpose flour (maida)
  • 1/4 cup rye flour (ragi atta)
  • 1/4 cup barley flour(jav atta)
  • 1/4 cup sorgham flour (jwari atta)
  • 1/4 cup pearl millet flour (bajara atta)
  • 1/4 cup corn meal (makai ka atta)
  • 1-1/2 teaspoons salt
  • 1 tablespoon flax seeds (toasted)(alsi)
  • 1 tablespoon sesame seeds (toasted)(til)
  • 1 tablespoon sunflower seeds (toasted)(chironji)
  • For Dusting:
  • 1 tablespoon ice water
  • 1 tablespoon olive oil
  • For sprinkle on Top:
  • Water melon seeds as required
Method
1.

Preheat oven to 220 degrees C.
In a pan add the soy milk, honey and oil,bring one boil. Set a side and cool. In a bowl add luke warm water add sugar,flour and yeast and keep for 5min,till forthy. Add in the cooled soy milk mixture.

In a large bowl add all flour,sprinkle all seeds and salt,make a well in the center,by using yeast mixture,knead firm but not too stiff dough. Knead dough for 10 minutes. Place into a greased bowl and cover with a damp cloth,for 1-1/2 hrs.

Punch down and cover again and allow to rise again for 45 minutes.Place into greased loaf pans and allow to rise for 1 hour.Brush with chilled water+oil mixture,sprinkle water melon seeds over it and allow to rise for 1 hour.

In preheated oven bake for about 45-50 min or till brown,give cuts when still hot;cool down on wire rack,serve as you wish,I like it with maple syrup...:)))
