Khurchan means,scraped thing....In this dish,vegetables and paneer is scraped on tawa ,by adding spices.....a very simple and yummy dish.....:))

  • 2 tablespoon oil
  • 1/2 teaspoon shah jeera (black cumin)
  • 1 onion (finely chopped)
  • 1 teaspoon ginger (crushed)
  • 1 tablespoon garlic (crushed)
  • 2-3 green chillies (finely chopped)or to taste
  • 1/2 capsicum (finely chopped)
  • 2 tomatoes (finely chopped)
  • 1 teaspoon red chilli paste or to taste
  • 1 teaspoon dry coriander powder
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon kitchen king masala
  • 2 tablespoon sweet corn (boiled)
  • 400 gram paneer (cottage cheese (finely chopped)
  • salt to taste
  • 1/4 cup fresh coriander leaves (finely chopped)
  • 100 gram paneer (cottage cheese)(grated)
  • 1 tablespoon butter
  • 1-2 tablespoon fresh lemon juice
  • water -as needed

Heat oil,in a non stick tawa or heavy bottom griddle or flat pan,add ingredients from 2-6 and roast on high flame,stirring constantly,when aroma arise,add capsicum and tomatoes,sprinkle little bit water,on high flame swat till,tomatoes become soft.


Now lower the flame,add ingredients from 9-13,mix well,add sweet corn ,paneer and salt,swat on high flame,it may be going to stick,just scrap it while constantly stirring with spatula,don"t use spoon.


Now add remaining ingredients from,17-19,and on high flame mix well,by scraping and that"s what called "KHURCHAN" in Hindi.Sprinkle fresh lemon juice and mix well.


Serve hot with..rice / nan / chapatti / bread....:))))))


NOTE: VEGANS can make it with silken tofu and avoid butter.
