I love Potatoes and coconut both,so there is not any better way to combine and have both...i think blend of both,tastes heaven....yum..:)

  • Yields: serve 4 person
Ingredients
  • For Marination:
  • 500 gram baby potatoes (boiled,peeled and pricked)
  • 1 cup fresh coconut water
  • 1/2 teaspoon salt
  • pinch of saffron
  • For Tempering:
  • 1 tablespoon refined coconut oil or any oil
  • 2-3 dry red chillies
  • 1 bay leaf
  • 1 cinnamon stick
  • 2-3 cloves
  • 1 mace
  • 1/2 cup cashew nut paste
  • 1 tablespoon curry powder
  • 1/2 teaspoon cumin powder
  • 1 cup thick coconut milk
  • 1 tablespoon lemon juice
  • salt to taste
  • For Garnish:
  • onion greens (chopped)
Method
1.

For Marination:In a bowl add ingredients for marination,keep covered for 15-20 min in refrigerator.

2.

For Tempering:In a pan heat oil,add all whole spices and swat for a min,add marinated potatoes,along with marination,cover and simmer for 5 min on low flame.

3.

Now add cashew paste,dry spices and mix well,adjust the salt and add coconut milk,simmer for 5 min and put off the gas.add lemon juice and mix well.

4.

Garnish with dry chillies from the gravy and onion greens,serve hot with steamed rice,chapatti or even plain noodles...:))

hello..Enigmatic Sher...maze is called JAVITRI in hindi ,it is a one of the whole spice available in any grocery shop or super market,if not handy you can avoid it also n make the dish.. : :) :) :)
