A quesadilla is a flour or corn tortilla filled with a savoury mixture containing cheese and other ingredients, then folded in half to form a half-moon shape.This dish originated in Mexico, and the name is derived from the Spanish word queso (cheese),as lots of cheese is used in this dish.A very good brunch option:)

Ingredients
  • For Tortillas:
  • 1 cup wheat flour
  • 1 tablespoon semolina
  • 1/2 teaspoon soy flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar
  • salt to taste
  • Carrot puree(boiled and pureed)-as needed
  • Dry flour for dusting
  • For Stuffing:
  • 1 tablespoon olive oil
  • 1 tablespoon garlic (minced)
  • 2 fresh green chillies(crushed)/ as per taste
  • 1/4 cup spring onions (chopped)
  • 1/4 cup tomato (grated)
  • 1/4 cup spinach (finely chopped)
  • 1/4 cup kidney beans (soaked over night,boiled and mashed)
  • 1/4 cup coriander (chopped)
  • 1/4 cup mix bell pepper (red-yellow-green-chopped)
  • 1/2 teaspoon red chilli flakes / as per taste
  • 1/2 teaspoon oregano
  • 1/2 teaspoon mixed herb
  • 1/2 teaspoon sugar
  • 1/2 teaspoon pepper powder
  • 1 teaspoon ketchup
  • few drops of capsico sauce
  • salt to taste
  • Cooking oil spray
  • For Topping:
  • Shredded cabbage as required
  • Finely chopped onion greens as required
  • Chat masala for sprinkling
  • Grated paneer (cottage cheese)as required (vegans can use tofu)
  • Grated processed cheese as required (vegans can avoid it)
Method
1.

For Tortillas:Mix all ingredients except carrot puree and make chapatti like dough and keep covered for 15 min.

Make lemon size balls and by using dry flour,just roll 1/2 inch thick medium size chapatti ,place it;on hot griddle or tawa roast from one side.

On roasted;side(only on half chapatti)apply very little ketchup and spread stuffing and then top with cabbage,onion greens,paneer,process cheese and sprinkle chat masala and fold the chapatti in half moon shape.

Now,press lightly on edges and by using oil spray,cook from both the sides till golden.Cut and serve with any sauce ,dip...or as it is.I served it with curd-basil dip...enjoy:)

NoTE:If you want to make it gluten free then use jau or jowar or quinoa flour instead of wheat flour.

NOTE:You can also use plain water to make dough,i just used carrot puree to increase more fibre and vitamins to my dish.Or if wish you can replace it with tomato or pumpkin puree,it also tastes good in it.

NOTE: If more health conscious,one can avoid process cheese and use only paneer.And if wish one can add any other cheese to this dish.

For STUFFING:In a pan heat oil,and add all ingredients of stuffing one by one in given order,swat in between after each addition,mix well;cool and use it.
