Mixed dal handvo is a traditional gujarati savoury cake, which is a nutritious meal in its own right when served with chutney and buttermilk.
Wash and soak the rice,wheat and lentils together for 4 to 5 hours. Drain and keep aside.Grind to a paste, add the sour yogurt and allow to ferment overnight.
Add the grated bottle gourd,pumpkin,chopped spinach and fenugreek leaves,oil, lemon juice, soda bi-carb, sugar, chilli powder, turmeric powder, green chilli-ginger paste and salt and mix well.
For Tempering: Heat the oil and add the mustard seeds and when they crackle. Add the sesame seeds and asafoetida and continue to fry till golden.
For Handvo: In a hot,non stick pan,pour little tempering,pour laddle full of handvo batter in a circular motion,on very low flame cook from both side,till golden.
Garnish with hot garlic sauce,for extra zing ,serve hot...with butter milk,tea or coffee....:)
NOTE: My Vegan friends,can avoid yogurt and make it.
NOTE: If you want to make it gluten free,can avoid wheat in it.
