Paneer Naan Pizza Recipe | How to use Naan Bread as Pizza base
Irrespective of whether you are a working mom, full time mom, helicopter mom or whatever new name that's trending now! -  the fact remains that ever since you became a mother, life is pulling you from all sides. Even the most organized mom (or dad) with the most well behaved kid(s), I am sure , still has their hands full with so many things in a day that a breather is most WELCOME. I have a live wire for a kid with a self induced/desired active lifestyle and I find myself being dragged along with him regardless of whether I like it or not. At the end of the day, we have a very satisfied kid but a very weary mom for whom the very word "cooking" is enough to bring tears. Torn between the "crunchy granola mom" and "exhausted mom" (Yes, I was reading this article just before writing this post - why do you ask?), I ask myself the million dollar question - "What's for dinner?"

Its for time like these that I take out my "Under 15 minute Lunch/Dinner" manual.  Naan Pizza appeals to everyone in my family catering to "coolness" factor, looks, taste and ease. Having store bought Naan is a blessing especially for recipes like these.  Topping are entirely your choice and it takes to variety of cuisines with flair  - Mexican, Italian, Indian, you name it and it works. The topping for this post are based on my family preference, but you can use what you like.

  • Yields: 1 Pizza
Ingredients
  • 1 store bought/ homemade Naan (I use the Atoria brand - Garlic Naan)
  • About 2-3 tbsp Marinara sauce (depending on the size of your naan)
  • Around 1/4-1/3 cup Mozzarella Cheese(or a mix with Provolone)
  • 1/2 cup chopped Vegetables of your choice (I use a mix of onions, bell peppers, olives, tomatoes and green garlic)
  • About 1/4 cup cubed Paneer
Method
1. Preheat oven 400F.
My CSA box from my local farm had some fresh garlic and I have used it.  I know mozzarella is THE cheese for a pizza, but I use a mix of mozzarella and provolone and we love it.
2. First up, spread some pizza/marinara sauce.
3. Follow that up with cheese and vegetables of your choice. I tend to go overboard with paneer. "Its the correct amount mom!" - quips the kid by my side.
4. Transfer it to the oven. I use a pizza stone that's pretty much always in the oven. Its now hot and ready. I use a pizza peel sprinkled with some wheat germ for the pizza to easily slide onto the stone.
5. Bake for 8-10 minutes or until the Naan crisps and the cheese melts.
6. I usually load up 2-3 naan pizzas at the same time so that we can all dig in right-away :)
7. Once done, remove, run a cutter wheel and enjoy. Some extra cheese and red pepper flakes don't hurt. :D
Serve it warm. It tastes best right out of oven.  They make great appetizers and finger food. Or serve them along a warm soup and/or salad. Or if you are like my family, simply eat more slices :)
