Blogging has taken a big backseat in my life currently. One of the main reasons being my kid who somehow manages to keep me on my toes with something or the other. Followed closely with my other pursuits, my 24 hours are well accounted for. The food, thankfully, has not. Time crunch has made me learn many quick recipes that don't involve restaurants or overly processed foods from the store. Convenience for our current generation comes with innumerable health baggages and as a person responsible for the health of my family, I feel accountable using them. So searching for minimal or unprocessed foods does take so much of my time but at least it's worth it on my conscience.
Peanut Butter Banana Sushi Recipe | Peanut Butter Jelly Banana Sushi Recipe | Banana Sushi Tortilla Recipe
This simple snack doubles (or triples?)  as breakfast, lunch or snack and works great for my food principles along with convenience/ease. I use minimally processed organic Tortillas and freshly made Peanut Butter. If you don't have the time to grind your own at home, you can grind your PB at Whole Foods which is as simple as pressing a button. It takes just a minute to put this whole snack together but is really filling and more importantly nourishing. Though I started making these for my little one, I liked them so much that it became part of my snack list as well. The surprising aspect is my husband insisting that he too likes these and would prefer it for his snacks at work! That's triple yay!

  • Yields: 1 serving
Ingredients
  • 1 Flour Tortilla (Spelt and Whole Wheat work great too)
  • 2 tbsp Peanut Butter (PB), or as needed
  • 1 med-large Banana
Variations
  • Roti instead of Tortilla
  • Almond Butter instead of PB
  • Nutella/Chocolate Spread instead of PB
  • Peanut Butter on one half of tortilla and Jelly/Jam on the other and roll tight to make PB&J Sushi
Method
1. If using Tortilla (I have used organic flour tortilla), warm it up a bit so that its flexible and doesnt break.
2. Spread it with Peanut butter (read my tips in the text above ingredients) as needed. Or use other variations as mentioned above.
3. Place the banana on top of the peanut butter layer, at one end.
4. Now roll up tight.
5. You can spread some peanut butter to the outer edges to create a seal.
6. I start slicing from the middle. The edges mostly get eaten by the cook while she is prepping these goodies :)
7. Cut then into sushi size pieces and serve.
These bite sized beauties are a great "pick me up" during evenings and the best part is that I hardly need time/energy to make them.
