Egg Bhurji or Paneer Bhurji is quite famous in India,available from street to five star hotels,I thought why not make bhurji,by omitting both egg and paneer,hope you guys like it:):)

  • Yields: serves 3-4 person
Ingredients
  • 300 gram cauliflower (grated)
  • For Tempering:
  • 1 tablespoon oil
  • 1 tablespoon butter (vegans can avoid it)
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon garlic (chopped)
  • 1 tablespoon chopped ginger
  • 1 onion (grated)
  • 1 tomatoes (grated)
  • 1 teaspoon yellow pimento (fine julienne)
  • 2-3 tablespoon water
  • For Spices:
  • 1 teaspoon chilli powder / as per taste
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon kitchen king masala
  • 1/2 teaspoon dry mango powder
  • 1/2 teaspoon sugar
  • Add On:
  • 1/2 teaspoon lemon juice
  • 1 green chillies (chopped) / as per taste
  • 1 teaspoon fresh coriander (chopped)
  • For garnish:
  • tomato (Chopped)
  • onion (chopped)
  • coriander (chopped)
  • paneer / tofu (for vegan)(grated)
Method
1.

In a pan heat oil and butter and add all ingredients for tempering and swat for 2 min,add grated caulifloer and swat for 3 min on high flame,add water and cook covered on low flame for 2-3 min.

Now add spices and mix well,cook for a min,put off the flame and add ingredients of add on,mix with light hand.Garnish and serve with bread or pav or rice or chapatti...:)

NOTE: this is complete vegan dish.I used cottage cheese for garnishing but if you are vegan can avoid it or use tofu.

Hi Sangeeta, Nice idea, can you please explain what is pimento. Is it a type of pepper. You can also have cauliflower with low fat white sauce indian style, i add powdered jeera, ground pepper, corriander leaves finely chopped with a hint of chilli powder, salt to taste. I steam the cauliflower and drizzle sauce on top with a sprinkle of gratd cheese and baked till cheese is golden. Also can add other veges like broccoli. Really nice. :)
