Karela / bitter gourd has the medicinal value to it,helps to increase the insulin level in blood,stimulates the appetite, cleanses the liver, purifies the blood, and provides many other benefits. This one is ma all time fav bhaji,i love 2 savor with steam rice or chapatti......:)

Ingredients
  • 250 gram bitter gourd
  • For Tempering:
  • 2 tablespoon oil
  • 1 teaspoon panch phoran
  • 2 tablespoon coriander powder
  • 1 tablespoon red chilli powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon amchur powder / dry mango powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 2 tablespoon brown sugar / white sugar / jaggery
  • 2 table spoon sweet lime juice
  • 1 tablespoon tamarind juice
  • 1 tablespoon poppy seeds
  • salt to taste
Method
1.

First of all,bitter gourd must be peeled and cut in circles,marinated in salt and turmeric for 15 mins and washed thoroughly.

2.

In a pan heat oil and add panch phoran and turmeric powder,add marinated bitter gourd and on high flame saute till golden brown.

3.

Lower the flame and add remaining spices,salt,tamarind juice and brown sugar.

4.

Put off the flame and add sweet lime juice and poppy seeds and mix well.

5.

Serve hot with rice or chapatti.Can be stored for 15 days,good option for travel or picnic.

NOTE:
Panch Phoran:
Fenugreek,Nigella seed,Mustard seed,Fennel seed,Cumin seed;take everything in equal praportion,mix and store in a air tight jar,use when needed.
