I used a thin ,soft,fresh skin of green peas,for (remove the hard skin from upper side by stretching from inner side of the ,skin)stuffing in this parantha,as i always wondering, what to do with all this skins of peas,i experimented,removing soft skin from upper,hard one,and you know it do wonders....:)))

Ingredients
  • For Dough:
  • 2 cup whole wheat flour
  • green coriander chutney as needed
  • flour for dusting
  • for Stuffing:
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon onion seeds
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon ginger (grated)
  • 1 tablespoon green chillies (finely chopped)or as per taste
  • 1 cup peas skin (finely chopped)
  • 1/2 cup water
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon dry mango powder
  • 1 teaspoon chat masala
  • 1/2 teaspoon sugar
  • salt to taste
  • 1/2 cup gram flour (dry roasted)
  • 1/2 cup fresh coriander (finely chopped)
  • Cooking oil spray -as needed
Method
1.

For Dough: In a bowl add,flour,make chapatti like dough by using green chutney.(don"t add salt as chutney already contain salt and there is a salt in stuffing too)keep aside covered for 5-7 min.

For Stuffing: In a pan heat oil and add ingredients from 6 to 12,one by one and swat in between,now add water and mix well,cover and cook on low flame till skin cooks.

Now add ingredients from 14 to 20 and mix well,put off the flame.Add chopped coriander and mix well,cool it off.

Make small balls out of the dough and roll 2 small puri,place a tablespoon full of stuffing on it,cover it with another puri,roll it like parantha,by using dry flour.Make other in same way.

On hot tawa or griddle spray little bit oil,place parantha and on medium flame cook from both sides by using little bit of oil.serve Hot as it is or with tea / coffee / any pickle / ketchup / gravy.....as per your choice,I like it with Tea...:))

NOTE: I used oil for roasting not for calorie count but for flavoring,it taste best when roasted with oil,but if one wish can use butter or ghee too.

NOTE: If any one is gluten intolerant ,can use any other flour instead of whole wheat flour.

NOTE: I used green chutney as I had,left over in ma fridge,yep it adds to taste too,BUT...BUT if you wish you can use water or any other fruit or veg puree to make dough.

9.

NOTE:You can use this stuffing to make Samosa,Kachori,Gughra,Sandwitch or even frankies too.You can add onions or peas too in this stuffing if wish.
