I used the white part of water melon;which we usually throw,to make this soup,as watermelon is packed full of nutrition, hydrates and is low-fat. While many of us think of watermelon as a great snack option, when you tally up its nutritive value, you might consider making this all-star a feature player in your cuisine.So,I tried to use as much part of it as I can:):

Ingredients
  • 1 cup white part of water melon (peeled and chopped)
  • For Tempering
  • 1/2 teaspoon olive oil
  • 1 cloves of garlic (chopped)
  • 3-4 fresh curry leaves
  • 2 tablespoon white onion (chopped)
  • Add on:
  • 1 cup veg stock or plain water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon crushed pepper
  • salt to taste
  • For Garnish:
  • fresh coriander leaves (chopped)
Method
1.

In a pan heat oil,add ingredients of tempering and swat just for a min,don"t burn onions.Add chopped melon and again swat for 3-4 min.

Cool and grind to make puree and again add to the pan.Add all ingredients of add on and simmer for 5 min.Add lemon juice after putting off the flame,stir and garnish with fresh coriander serve hot......with multigrain bread sticks or any starter.......enjoy hot:)

NOTE:IF you are not so much calorie conscious ,add 1/4 cup coconut milk at final stage just before putting of the flame,believe me friends,it makes the soup more creamier and yummier.!!

NOTE: I served it with fresh water melon cubes,as when you drink this hot soup and in between you have the bite of the sweet,cool,fresh water melon,it is really undefinable for me...:))))
