This parantha contain everything which is included in palak paneer sabji,so you dont have to eat parantha n palk pneer sabi.....separately....:))))))

Ingredients
  • 2 cup whole wheat flour
  • 1/2 cup gram flour
  • For Paste:
  • 1 cup spinach (blanched)
  • 4-6 cashew nuts
  • 1 tablespoon hung yogurt (Vegan can avoid it)
  • 1 tablespoon cream (Vegans can avoid it)
  • 1-2 green chillies or to taste
  • 1/4 inch ginger
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dry coriander powder
  • 12 teaspoon chat masala
  • 1/4 teaspoon dry fenugreek leaves
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon sugar
  • 1/2 teaspoon lemon juice
  • salt to taste
  • water as needed
  • Dry Flour for dustng
  • For stuffing:
  • Malai Paneer (cottage or ricotta cheese) (grated)-as needed
  • Jal Jeera powder-as needed
  • Butter /ghee /oil -for roasting
Method
1.

In a grinder,grind a smooth paste of all ingredients,given for grinding.In a deep bowl add flour and gram flour and by using paste make normal chapatti like dough,apply 1 teaspoon oil and stretch well.

No need to rest the flour,make lemon size balls,by using dry flour roll small puri,now sprinkle grated paneer and jal jeera powder over it,cover it with another small puri,seal properly,roll into parantha.

On hot griddle or twa place it,and roast from both sides by using any fat of your choice,butter taste good on it.Cut and serve hot.....with plain yogurt or any sauce or ketchup or gravy.....:)

NOTE:Vegans can avoid yogurt,cream .In place of paneer they can use silken tofu.

5.

NOTE: If you want to make it gluten free can use any flour instead of whole wheat flour.
