This is very popular Panjabi dish,available in any restaurant in India or abroad.This is ma fav dish,i made it today for lunch,wanna share with you all.As you all know palak (spinach) and paneer (cottage cheese) both are rich in protien ,calcium,fibre and folic acid...very healthy dish,can be served with steamed rice or any flat bread.

  • Yields: serve 2-3 person
Ingredients
  • 500 gm palak/spinach, blanched and pureed
  • 300 gm malai paneer/ soft cottage cheese,cut in thick fingers(TOFU FOR VEGANS)
  • For Tempering:
  • 2 tablespoon oil
  • 2 tablespoon butter(vegans can avoid it)
  • 1 bay leaf
  • 1/4 teaspoon asafoteida
  • 1 teaspoon shah jeera/black cumin seeds
  • 1 tablespoon ginger,grated
  • 3 tomatoes,blanched and pureed
  • 3-4 green chillies,crushed
  • For Spices:
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chilli powder /as per taste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon panjabi garam masala
  • 1/2teaspoon kitchen king masala
  • 1/2 teaspoon amchur powder/dry mango powder
  • 1/4 teaspoon pepper powder/as per taste
  • 1 teaspoon sugar
  • 2 teaspoon kasuri methi/dry fenugreek leaves
  • salt as per taste
  • Add On:
  • 2 teaspoon gram flour + 2 tablespoon milk mixture
  • 2 table spoon yogurt (vegans can avoid)
  • 1/4 cup fresh cream (vegans can avoid)
  • 2 teaspoon lemon juice
Method
1.

For Tempering:
In a pan heat oil and butter and add given ingredients,in a given order and swat for 3-5 mins.

2.

For Spices:
Add spinach puree and add spices in a given order and saute for 3-5 mins.

3.

For Add On:
Add given ingredients one by one,in a given order and saute for 5-6 mins.now add paneer fingers,mix lightly.

4.

Lastly put off the gas and add lemon juice and fresh cream and mix all.Serve hot with nan,i love it with piping hot plain rice:)
