Apple Bran Muffins - Eggless

You have had a healthy and simple lunch, you are happy that you ate sensibly, you put a nice blue tick near that particular meal in your "Eat Sensibly Resolution Chart" and feeling mighty pleased about it. Tick, Tock, Tick...the clock ticks away slowly the hand creeping towards 4:00 PM and something else creeps in your belly! Hunger pangs and the mind starts playing dirty tricks - making you imagine - Jalapeno chips wonderfully crunching in your mouth; how about that 'tadak' sound when you bite that nutty chocolate bar, mm...and and how about that delicious looking bagel with a nice filling of cream cheese making eyes with you..........aaah!!!!

No, No, you say, looking at your chart!. For such moments, here is another yummy alternative which wont make you feel that you are on a diet or something. Apple Bran muffins is the way to go - They have that Jalepeno chip like crunch as soon as you bite into it and 2 seconds later, you get a nice chewy texture like that bagel and in the end you feel like you have bitten away the nutty chocolate bar to glory - except that you havent.

What you did was eat into a nutrition powerhouse that is so ridiculously low in calories in return of immense benefits that its not even funny! It has a fruit, goodness of wheat and wheat bran, nuts and spices which make blend it all together. Don't go by the appearance - This is one Abraham Lincoln model - The packaging isnt pretty - but whats inside is worth all the time, effort and money :)

  • Yields: Makes 12 muffins
  • 1 apple, grated
  • 1 cup wheat bran
  • 1 cup whole wheat pastry flour
  • 1/4 cup All purpose flour
  • 1 cup milk
  • 1/4 cup pecans ( or walnuts)
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 cup applesauce
  • 1/4 cup oil
  • 1/2 tsp vanilla extract
  • 1 tbsp baking powder

1. Preheat Oven to 375F. Mix all the wet ingredients together along with the spices.
2. In a seperate bowl, add all the dry ingredients together.
3. Now mix both of them together.
4. Drop spoonfuls of the dough into a lined muffin pan.
5. Bake them for 20-30 min until golden brown.
6. Cool them in a counter and enjoy!

I've been juicing. Bought some bran mix recently. Thought it would be grand to make my favortie bran muffin and apples... Apples make me go YUM!

I made these muffins yesterday and I absolutely love them! I don't often make muffins, but I'm glad I made these. It was very nice to bake something where I didn't feel the need to alter the recipe at all to make them healthier. Although, I did make a few changes based on what I had in my kitchen. Changes are as follows:

- instead of 1 cup bran, I used 3/4 cup oats and a 1/4 cup bran

- I substituted the grated fresh apple with 1 cup of chopped frozen apple (we have lots of apple slices in our freezer from our tree)

- I also added 1/2 cup chopped frozen cranberries

- I had to leave out the nuts, due to allergies in our household

I will definitely be making these again. I think this recipe may become my base muffin recipe from which I will make variations (different add-ins, spices etc.).

Hi.. Fr some reason my last post is not fully displayed.. Too long i suppose. My question was- in India baking soda is considered very unhealthy. And baking powder too is eaten in limited qty.. What's your take.. I see that you research a lot abt things u are using..are recipes like these muffins with soda n all fit for kids regular consumption ??

Thank you. From my personal observation Baking soda/powder is natural and is not unhealthy at all. If it was, most of the westerners would have been wiped out ages ago given the amount of consumption they do on regular basis. So, its safe for regular consumption depending on how healthy your muffins/cakes/other foods are where you are using the said soda/powder. We enjoy waffles/pancakes/breads in moderation - just like any other food out there. :)--DK

Hi, I made these muffins they are great. But I am having a problem with the lined paper the muffins are sticking so bad I am losing almost half the muffin. Is there anything I can do to stop this?? :(

Just spray the muffin insides with PAM or grease it lightly with oil. It wont stick to the muffins. --DK

Awesome website, awesome recipe!!! can i replace wheat bran with rolled oats?? will that affect the cooking time or should i follow a different procedure if i were to substitute??

Thanks Madhu :). I dont think the timing will differ that much nor the procedure. But it will surely affect the taste. These muffins are amazingly chewy due to the bran, hence using oats will not give it that much of chewiness. Otherwise it should not be a problem per se --DK
