It's a great redipe and a wonderful moist cake
We simply loved it.
I used a mixer, next time (and I will make it again) I will use food-processor before adding the quinoa.

The cake is a flourless cake so given that u used it, it will change the composition. But given that, I m glad it worked out well for you --DK
I don't think Egg substitute did it...usually dense could also be attributed to overbeating the batter. A light folding action would have turned out a softer cake.--DK
