A south Indian dish......simple yet tasty...:)

  • Yields: serves 4-6 person
Ingredients
  • For soaking:
  • 1 cup rice (thoroughly washed)
  • 2 cup fresh coconut water
  • pinch of saffron
  • pinch of cinnamon
  • For Tempering:
  • 2 tablespoon coconut oil / veg oil / butter
  • whole spices :
  • 1 big cardamom
  • 3-4 cloves
  • 1 inch cinnamon
  • 2 dry red chilli
  • 1 inch ginger (grated)
  • 1 cup onion (finely chopped)
  • For Add on:
  • 2 cup coconut milk (2nd extract)
  • 1 cup coconut milk (1st extract)
  • 1/4 cup cashew nuts (toasted and crushed)
  • 1 teaspoon brown / white sugar
  • 1 teaspoon pepper powder or as per taste
  • 1 teaspoon vinegar / lemon juice
  • 1/4 teaspoon rose water(optional)
  • salt as per taste
Method
1.

Mix all ingredients under soaking ,keep for 1/2 an hrs.

2.

In a pan heat oil and add tempering things one by one,saute for 5 minutes.

3.

Add soaked rice ,without draining and saute for 5 minutes.

4.

Add 2nd extract of coconut milk and salt,cook covered till done.

5.

Stir in between,to prevent from sticking to the bottom.

6.

Add all add on"s,one by one and mix well,Serve HOT..........:)))))

actually ma mom is making it by first tempering scrap coconut and spices,and adding boiled rice to eat,i just given this old recipe little bit new clothes,that"s all...:)
