The final ground batter should be smooth and velvety, with a consistency like that of Ketchup. Not watery nor too thick that it won't flow either. Another possible reason could be lack of fermentation. If your batter did not ferment enough, then your idlis could turn out sticky.

The idly so sticry and if I break the idly it is candle wax with hole in it

Hi, I find it difficult to remove my idly from the pan, I kept it to raise for about 10 hours. What could bet he reason ? I tried removing it when it's hot , because I can make only 9 idly at time with the pan I have. please help.
