This is gluten free,eggless ,fruity and very delightful break fast come dessert..:)

Ingredients
  • 1 cup barley flour (jau atta)
  • 1/2 cup ragi flour
  • 1/4 cup bengal gram flour
  • 2 tablespoon cocoa powder
  • 1 tablespoon chocolate boost powder
  • 1/4 cup fresh pomegranate juice
  • 1/2 teaspoon baking soda
  • pinch of salt
  • pinch of clove powder
  • jaggery water (strained)-as needed
  • Cooking Oil Spray
  • For Topping:
  • Apple (thickly grated)-as needed
  • Process Cheese (grated)-as needed(VEGANS can use silken tofu)
  • For Serving:
  • Vanilla Ice cream- as needed (VEGANS can avoid it)
  • Black berry compote- as needed
Method
1.

For Pancake: Mix all ingredients except jaggery water and now make pourable batter by using jaggery water,and whisk in one direction till smooth and fluffy.Keep covered for 15 min.

After 15 min,again whisk the batter for a min and on hot non stick pan,spray cooking oil,pour laddle full of batter and make thick and small pancake,sprinkle 1 teaspoon grated apple,cover and cook for 3-4 min,on med flame.

Now flip the pancake,spray oil,on sides,cook for 2-3 min,again flip the pancake and again sprinkle 1 teaspoon of grated apple and 1 tablespoon of grated cheese,cover and cook till cheese melt.

Serve HOT with scoop of vanilla ice cream on side,drizzle black berry compote on both pancake and ice cream ....enjoyyyyyyyyyyy:)

NOTE: If you want to ,you can replace,jau or barley flour with whole wheat flour,and then you can add 1 tablespoon of semolina to it.

NOTE: If more calorie conscious,replace process cheese with cottage cheese (paneer).

NOTE: If pomegranate juice is not handy or don"t like it just avoid it replace it with fresh orange or lime juice,which also goes very well with this recipe.

8.

NOTE: If black berry compote is not handy just sprinkle any fruit jam after diluting it with little water...I used it as i have ma home made black berry compote,handy:)
