Tikked is a flat, thick bread from Rajasthan, mostly made with wheat flour, salt and lots of ghee;which ma granny used to make when i was child and that also mostly during winter season. So,as winter season started in India,i thought to make it in ma own way..D

  • Cook time:
  • Prep time:
  • Yields: serves 2-3 person
Ingredients
  • 1 cup wheat flour
  • 2 table spoon wheat bran
  • 1 tablespoon semolina
  • 2 tablespoon roasted and powdered cashew nuts
  • 2 tablespoon sour curd (vegans can avoid it)
  • crushed pepper to taste
  • salt to taste
  • Carrot juice (fresh) as needed
  • Ghee /butter or oil for vegansas needed
  • Roasted and chopped cashewnuts as needed
  • Milk as needed
  • Dry flour as needed
Method
1.

In a mixing bowl mix first 7 ingredients and make stiff dough by using carrot juice, rest for 10 min, make small blls of equal size from it.

2.

Roll thick and small tikked, prick with fork and place on hot tawa or griddle.Apply milk with brush on upper side of tikked and press chopped cashew nuts on it with light hand.

3.

Now cover and cook on medium flame, apply ghee or butter or oil and again cover and cook and then apply ghee or fat of your choice.

4.

Serve hot with any Raita / plain yogurt or any spicy veg gravy or try it just as it is with any hot beverage......:)

5.

NOTE: Traditionally lots of fat is used while making dough, but i replaced it with yogurt, which will give softness to the tikked.

6.

NOTE: Traditionally hot water is used to make dough but i used carrot juice instead of water to add more vitamins and nurients to it.

You can also use any other fruit or veg juice instead of carrot.

You can use any other nuts accoring to the combination of juice or can totally avoid it.

7.

NOTE: You can also bake it by brushing with little bit oil or butter in preheated oven @180 degree C for 15-20 min or till done.
