The main reason for the fried rice to get soggy is that you are using too many ingredients. The wok needs to be at high heat and adding many ingredients will bring down the temperature resulting in soggy mushy rice. If you really insist on having that many ingredients, I would suggest cooking them individually first and then adding them together for a final mix when serving.
