Malpua is traditional sweet,served with rabadi......this one is gluten free,i made,specially for Krishna Janam:)And as u all know about ma passion for fruits.......added apple in rabadi and pineapple in malpua....believe me this sweet sour combination is so delectable u want to make it again and again:)

Ingredients
  • For Malpua:
  • 1 cup singhada atta (chestnut flour)
  • 1 tablespoon varai or sama or bhagar or jungle rice (pwdered)
  • 1/2 cup milk (chilled)
  • 1/2 cup malai or fresh cream
  • 1/2 cup fresh pineapple (crushed)
  • Ghee for shallow fry
  • pinch of saffron
  • For Apple Rabdi:
  • 1 cup whole milk(boiled and chilled)
  • 1/2 cup condensed milk
  • 1/2 cup milk powder
  • 1 apple (peeled and grated)
  • 1/4 teaspoon almond essence (optional)
  • For Garnish:
  • Almonds (blanched and sliced)or any dry fruit
  • saffron water
Method
1.

For Malpua:
Mix all ingredients for malpua,except ghee and keep aside for 4-6 hrs.

Heat ghee in a flat pan and pour a ladle full over it in a circular motion.shallow fry from both sides.

For Apple Rabdi:
Mix all ingredients with blender,refrigerate till use.

Serve hot malpua with cold rabdi or as it is by just sprinkling desiccated coconut and dry fruits:)
