Buff Vada,a Gujrati delicacy from India,which is specially made during fasting for the GOD in rainy season.

Ingredients
  • For Cover:
  • 500 gm potatoes (boiled and mashed)
  • 50 gram sago flour or sabudana atta
  • 50 gram chestnut flour or singhada atta
  • rock salt to taste
  • For Filling:
  • 300 gram fresh coconut (grated)
  • 100 gram roasted peanut powder
  • 100 gram roasted sesame seeds powder
  • 100 gram cashew nuts (chopped)
  • 100 grams of red raisins (soaked)
  • 100 gram fresh coriander leaves (chopped)
  • 25 gram green chillies (finely chopped)or to taste
  • 5 gram crushed pepper
  • 10 gram powder sugar
  • rock salt to taste
  • juice of one lemon
  • For Dusting:
  • Sago flour - as needed
  • For frying:
  • Refind oil
Method
1.

For Cover: In a large bowl,mix all ingredients and make small lemon size balls out of it,keep aside.

2.

For Filling: In a large vessel,mix all ingredients and make marble size,balls out of it,keep aside.

Now make small patties of cover balls on your palm,stuff ball of filling in it.Pinch from all side and cover the filling properly.

Heat the oil in a pan.Dust the prepared balls,in sago flour and on medium heat deep fry,till golden in batches.Drain on tissue paper.

5.

Serve hot with curd,mint chtney or as it is with tea or coffee.

NOTE:If wish you can make variations in filling but traditionally,this filling is used.
