Poha, made from flattened rice, is an easy-to-cook, nutritious snack. It is often eaten for breakfast or brunch.I added the flavor of coconut to it ,for giving a new twist to regular kanda batata poha.

Ingredients
  • 2 cup thick Poha (flattened rice)
  • 1/2 cup fresh coconut water
  • For Tempering:
  • 1 tablespoon coconut oil or any oil
  • 1 teaspoon mustard seeds
  • few curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 onion (chopped)
  • 1 teaspoon ginger juice
  • 2-3 green chilies (crushed)o to taste
  • 1/4 cup fresh tender coconut (finely chopped)
  • 1 tablespoon lemon juice or to taste
  • 1/4 teaspoon plam sugar
  • 1/2 teaspoon mix spice powder (clove, cinnamon, nutmeg, anise and cumin dry roasted and powdered)
  • salt to taste
  • For Garnish:
  • fresh coriander (chopped)
  • fresh coconut (grated)
  • lemon wedges
Method
1.

Wash the poha in stainless steel strainer,transfer to a large bowl and add fresh coconut water,lightly mix and keep aside for 7-8 min.

In a pan heat oil and add ingredients from 5-10,swat till onions become transparent.Add soaked poha and lightly mix well,cover and cook for 5 min on low flame.

Now add ingredients from 11 -15 and mix well.Again cover and cook for 2-3 min.Garnish and serve hot....:))))))))))

NOTE:Must use lemon juice in poha,because...poha is high in calcium and iron and ,iron from food can not be absorbed fully with out the use of vitamin C.
