This frankie is prepared with quinoa,oats and rice flour and stuffed with seasonal veggies and fruits of your choice. Quick 2 make and easy 2 digest:)

  • Yields: serves 2-3 person
Ingredients
  • For Pancake:
  • 1/2 cup rice Flour
  • 1/4 cup oats Flour
  • 1/4 cup quinoa flour
  • 1/2 tsp cumin Seeds
  • 1/2 cup fresh carrot juice / any veg juice
  • water as needed
  • Salt to taste
  • Oil as Required
  • For Stuffing:
  • 1oo gram paneer (cottage cheese) grate / vegans can use tofu
  • 100 gram apple (finely chopped)
  • 50 gram walnuts (finely chopped)
  • 50 gram golden apricoat (chopped)
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon fresh red chilli (chopped) / as per choice
  • 1 teaspoon green chillies (chopped) / as per taste
  • 2 teaspoon fresh coriander (chopped)
  • salt to taste
Method
1.

For Stuffing: In A bowl mix all ingredients and keep aside,till used.

For Pancake: In a mixing bowl, mix together all flours,carrot juice,cumin seeds and salt.Add enough water to make it somewhat thin batter.

On a hot tawa / griddle, apply few drops of oil, pour a ladle full of batter in circular motions.Make sure batter is thin enough that it makes small holes when batter hits the hot pan.

Fry on low – medium flame till bottom side starts to turn golden brown.Pour few drops of oil around the pancake and turn on other side.

5.

Place 2 tablespoon of stuffing on the pancake and roll like a frankie,cut and serve hot as it is or with any hot sauce or dip:))))
