Polenta is delicious comfort food and tastes great with everything from cheese to tomatoes to mushrooms ...It is normally made with a yellow maize flour,but i made it with QUINOA FLOUR;Once a staple to the Incas, which was regarded by colonists as a lowly food and outlawed by the Spanish conquistadors, quinoa has bounced back and become, not just trendy, but widely embraced by everyone from vegetarians looking for a protein fix and a new flavor profile.

Ingredients
  • 1 cup quinoa four
  • 1 to 1-1/4 cup water (as needed)
  • 1 cup coconut milk(2nd extact or thin)
  • 1/2 cup green peas
  • 1-2 green chillies (chopped)/ as per taste
  • 1 teaspoon olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon lemon juice
  • salt to taste
  • crushed pepper to taste
Method
1.

In a deep,heavy bottom pan,add water,bring one boil on fast flame,and add olive oil,salt,turmeric powder,sugar,green peas,green chillies and again bring one boil.

Add coconut milk and stir;immediately add quinoa flour,mix fast on high flame and cover and cook for 3-4 min,on low flame.

Add lemon juice,crushed pepper and mix well.Serve hot.....as it is or with any sauce over it like maize polenta.

NOTE:Friends you can also substitute coconut milk with butter milk to make,it more healthier.(if not vegan)

NOTE:If wish,one can avoid coconut milk and can use water in it"s place.And can use any veggies of their choice to it.Carrots / Capsicum / Red or yellow bell pepper will also tastes good in it.
