Guacamole with Baked Corn Chips
Sometimes something as simple as a dip can make my day! Guacamole is one such, that can uplift my spirits no matter what. I have to be honest - I do not like avocados. I wanted to include that in my diet when I got to know that it was a nutrition powerhouse and especially good for women. Though the calories in an avocado is high, these fats are actually mono saturated and thought to reduce blood cholesterol. But, the very taste of it (or should I say the lack of it?!) was very off putting. Then one day, we went to a Mexican restaurant for the very first time and I got introduced to guacamole. It was such a game changer. Now, THIS I could love.
Guacamole with Baked Corn Chips
The bland avocado when combined with onion, garlic, lemon and some seasoning suddenly morphs into a super flavorful dish. Of course with time, I have come to dress it up in many other way that suits my palate and have come to appreciate it even more. I find myself stocking up on avocados every week nowadays. When the evening "danger" pangs hit me, instead of reaching out for junk, I make myself this dip. Paired with some baked corn chips, its filling and very satisfactory. At the end of it, I get up feeling guilt free.

Ingredients
  • 4 medium or 2 large ripe avocados
  • 1 small red onion,chopped finely
  • 2-3 green chillies, sliced thinly (or as per taste)
  • 1 tbsp Olive oil
  • 1 cup seeded cherry tomatoes, quartered ( or chopped regular tomatoes)
  • 1-2 minced garlic
  • zest of one lime
  • juice of 2 limes (according to taste)
  • 1 tsp cumin powder
  • Cilantro for garnish
  • 4 corn tortillas
  • 1 tsp chilli powder (as per taste)
  • 1-2 tsp olive oil for chips
  • 1 tsp cumin-coriander powder
Method
1. Cut 2 medium avocados(or 1) in half and discard the stone. Scrape the flesh from the halves and mash it roughly with a fork. I like them chunky, but if you prefer smooth guacamole just blend them in a processor.
2. Add the onion,chilli,lime zest,juice,tomatoes and chillies. Stir and then add the cumin powder, pepper if needed and the olive oil.
3. Halve the remaining avocado, dice the flesh in small pieces and stir into the guacamole. This step is optional. You can instead use all the avocados and mash them along with the rest. Squeeze the lime juice to taste. Meanwhile stack the corn tortillas one on top of the other
4. Cut then into Chip size pieces.
5. In a seperate bowl, in 1-2 tsp of oil mix the chilli powder, cumin-coriander powder, salt
6. drop the corn tortillas in the bowl to coat them with the mixture ( again this step is optional. You can bake them just as they are and they still turn out great)
7. Place them side by side on a baking sheet.
8. Bake them for 5-7 min in a 350 F oven or until lightly crisp. They get more crisp after cooling.
9. Serve the guacamole garnished with the cilantro and with stack of these Baked chips.
If you do not have the time to make corn chips, there are many healthy options available at the grocery. Even otherwise, it goes well with so many things - tortillas, breads, bagels, pita/pita chips, crackers etc. For something that is this easy to put together, this is a must have in your fridge.

Hey, I love the first pic esp the bowl in which Guacamole is served! and its one of my fav mexican dishes. :) I always have this as a side dish, which my favorite Gumbo!

Dk, your house is like mine.. I don't usually have any treats lying around.. When my DH wants to buy anything, I brush him off saying "I can make this at home for less money and better nutrition", but rarely get a chance to put it in action. So guests need to give me at least 1 hour to prepare. :-)
