Matki Sprouts Pulao Recipe | Moth beans Rice
Recently a friend of mine came over to visit me and stayed for dinner. Her little one is among those super smart kids, who just asks questions for which giving convincing answers is next to  impossible. There are always 100 questions in 10 minutes. Its utterly amazing how observant they can be. Though its such a blessings to have this much brilliance, it can be sometimes little hard too. All her attempts to make her daughter eat "healthy" is counter argued remarkably well. I am predicting an immensely successful lawyer profession for little "A". Usually, I like such challenges and can't wait to experiment. I had some sprouted Moth beans in my counter waiting to be used.

I thought why not use that to make some dinner for the little one. My friend was like, its a waste cause since little "A "hated sprouts and wont eat them.  So, I made some alternate meal for her just in case my experiment failed. I always believe vibrant colors and presentation do help since after all we all do eat with our eyes first. I wanted to distract her attention from the sprouts by way of adding more colors. Sometimes, in our quest to eat healthy, I think we tend to overdo it and go all the way. Just like dieting. The word "Diet" should be banned in my opinion. Diet should be replaced with lifestyle. I say this cos in our minds, the word diet is always seen to mean "temporary".  Hence it never works.  (OK that's for another post!) The little one noticed me taking out (made sure of that), she loved the way they looked (see the picture of them) and asked me questions. I told her imagine how something so beautiful will taste. She got curious. I then showed her the Oregano leaves growing in my potted plant in the kitchen. I asked her to slowly pluck out the baby leaves. (as in the pic) since she thought they were cute. Then I said, lets cook all of them together. I said, I am adding other ingredients just to compliment the rest of the "baby" things in the dish and showed her my sprouting moth beans. Told her they were babies of a big plant. Since she "helped" me choosing ingredients and helping me in making this dish, she was curious about the taste. I added a little ghee on top of her bowl of pulao along with garnish. The full bowl was done and over with.She also informed us  about how well she cooked and asked her mom to cook like her (!!!!) Kids! really :) :)

  • Serves: 2 people
Ingredients
  • 1 cup Matki (Moth beans) Sprouts [ See how to Sprout Moth beans (Matki)]
  • 1 to 1-1/2 cups cooked basmati rice (or leftover rice)
  • 1 tsp fennel seeds (or cumin)
  • 1 onion, finely chopped
  • 2-3 green chillies, thinly sliced (or as per taste)
  • 1 inch ginger, peeled and grated (or chop it fine)
  • About 1 cup Bell peppers, sliced ( I used mixed colored baby bell peppers for adding vibrancy to the dish)
  • 1/4 tsp turmeric
  • 1 tsp cumin-coriander powder
  • 2-3 cloves of garlic, minced (optional)
  • 1 spring onion sliced
  • salt to taste
  • few cilantro leaves for garnish ( My oregano was thriving, hence used fresh oregano leaves)
Method
1. In 1 tsp of oil, saute the seeds. Once aromatic, add onion, spring onion whites, ginger, garlic, chilli and bell peppers with salt until soft.
2. Then add the sprouts and saute them for another few minutes along with spices and little water (about 1/4 cup). Cover and cook - the steam will cook the sprouts.
3. Add the cooked rice to the mix
4. Mix until well stirred. Garnish with herbs and spring onion greens.
If you have finicky eaters in the house who can decipher "healthy" ingredients like  bloodhounds, drizzle some butter/ghee on their plate on top of the rice. The color and added richness will make sure that they eat this nutritious meal. You don't have to add lots of butter/ghee in the dish. Just 1 drop or 2 on top of their portion of rice will work fine. :) Just my two cents - you know better ;)  We enjoyed it with Spinach Raita and Papad. This was so good! I've never tried sprouting beans before but this definitely made it worth it. I use a poblano pepper, finely chopped, and added the seeds. I think the extra heat was worth it.

How true Divi.Getting kids eat their food is really a huge task and u did it rite!!Letting them choose the ingredient or the meal is a giant step in achieving what we want. The pulao looks perfect!!!
