Mango mania is going on...combination of coconut and mango is very unique and tastes divine...yummmmmmmmmm

Ingredients
  • For Coconut Layer:
  • 1 cup grated fresh coconut
  • 1/4 cup brown sugar
  • butter scotch essence
  • 1 Alphonso mango (chopped)
  • 100 ml non dairy whipped cream (sweetened)
  • 1/8 teaspoon oil for greasing
  • For Garnish:
  • mango (sliced)
  • silver balls
Method
1.

For Coconut Layer:
In a non stick pan add brown sugar when it starts to melt,add coconut and swat for 5 min put off the flame,cool it off and add essence.Keep aside.

For Assembling:
In a small pie plate,apply little bit oil and spread 1/2 of the coconut mixture,press lightly.

Place chopped mangoes over coconut base and cover with cream.Now keep in the deep freezer for 5 min,when it sets layer remaining 1/2 mixture of the coconut over it.

4.

Now again place chopped mangoes on base and cover fully with cream,set in deep freezer for 10 min,then keep it in the refrigerator till use,garnish with fresh mangoes and silver balls.

NOTE:You can replace mangoes with pineapple too,it also tastes divine.

NOTE:You can replace non dairy cream with regular,whipped cream.
