Actually friends I hate cauliflower,since child hood and always avoided it.....but as I come to know that cauliflower consumption has cancer-preventing potential,digestive and antioxidant properties,prevent cardiovascular and cerebrovascular disease.Cauliflower contains many nutrients like calcium,vitamin C,dietary fiber,manganese,vitamins B1 (thiamine), B2 (riboflavin), B3 (niacin), B5 (pantothenic acid), B6 (pyridoxine) and B9 (folic acid);making it an excellent addition to any diet.Then I stared eating eat but with variations...:)

Ingredients
  • For Cover:
  • 1/2 cup sorgham flour (jowar atta)
  • 1/2 cup chest nut flour (singhada atta)
  • 1/2 cup amaranath flour (rajgeera atta)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon lemon juice
  • salt to taste
  • Barley water (luke warm)-as needed
  • 1/2 teaspoon olive oil
  • DRY FLOUR for dusting-as needed
  • For Stuffing:
  • 1 teaspoon olive oil
  • 2-3 dry fenugreek seeds
  • 2 pepper corn
  • 7-8 dry kashmiri red chillies / as per taste
  • 1 teaspoon dry coriander seeds
  • 250 gram cauliflower florets (thoroughly washed with salty water)
  • pinch of salt
  • pinch of sugar
  • Add ON:
  • 1/2 cup parsley (fine chopped)
  • 1 tablespoon jaljeera powder
  • 1 teaspoon cumin power
  • 1/2 teaspoon sugar
  • salt to taste
  • COOKING OIL SPRAY
Method
1.

For Cover:
Mix 2-7 ingredients,make normal chapatti dough by using barley water.Apply olive oil,just knead and keep aside for 5-7 min.Then roll big 1/2 inch thick chapatti by using any dry flour.Cut it in small rectangles of equal size.

For stuffing:
In a pan heat oil,add all ingredients of stuffing,stir well and cover and cook on low flame for 5-7 min.Cool and coarsely crush it.(i here added pinch of salt to cook the flower fast and sugar to intact flower"s color & sweetness)

Now add,21 -25 no. ingredients;to the stuffing and mix well.On plain surface;place one rectangle,spoon stuffing on it,leaving the edges of the rectangle,cover with another rectangle and seal the sides with hand.Slightly roll it,with rolling pin.

On Hot tawa or griddle,spray little bit oil place the parcel,and on medium flame cook from both the sides till done or golden by using very little oil spray.Serve hot as it is or with any flaovred yogurt or raita or ketchup or dip...:)

NOTE: I used barley water but you can use plain water or any fruit or veg juice to it but it must be luke warm.

NOTE: You can use any other flour in a single or combination to make cover;there is not any hard and fast rule or measurement for it.

7.

NOTE: You can use broccoli or any other veg of your choice,instead of cauliflower,to make stuffing by using the same method.

8.

NOTE; If you wish you can also;bake this parcels.

i think that we all run errand for whole day,which require much more energy and if we take proper,healthy,low cal breakfast in the morning ,which we can have without guilt and to our hearts content as we all know there is a saying that "one has to eat king size breakfast" then we can have the energy that lasts long.and this is one such type of breakfast.......ii think so......try this out...:)
