Uttapam a South Indian dish...made from fermented batter of rice and black gram along with onion or veggies...this one is instant...no need for any prolong preparations...:)))))))))))

Ingredients
  • For Batter:
  • 1/2 cup flatttened rice
  • 1/2 cup rolling oats
  • 1/2 cup broken wheat (boiled)
  • 1/4 cup sago (roasted)
  • 1/2 cup gram flour
  • 1/4 cup carrot (grated)
  • 1/4 cup bottle gourd (grated)
  • 1 teaspoon ginger grated
  • 1/4 teaspoon sugar
  • 1/4 teaspoon soda-bi-carb
  • salt to taste
  • water as needed
  • For Topping:
  • 1/2 cup onion (finely chopped)
  • 1/2 cup fresh coriander (chopped)
  • green chillies (finely chopped)-as required
  • salt and pepper-as needed
  • cooking oil spray-as needed
Method
1.

For Batter:
In a grinder add ingredients from 2-5 and make a smooth paste.Add remaining ingredients and mix well.add require water to make pouring consistency.Rest it for 15 min.

On a hot non stick tawa or griddle,sprinkle little bit of oil,pour a spoonful of batter in a circular motion,keep it 1/2 inch thick and sprinkle onion,coriander,green chillies,salt and pepper according to your taste,cover and cook for 2-3 min,on low flame.

Now sprinkle little bit of oil on top and carefully turn it and on low flame cook for 2-3 min.Serve hot with tomato rassam and chutney or any other condiments or as it is with tea or coffee......:)))))))))))

NOTE: You can add any veggies of your choice in the batter.

NOTE: You can add paneer / tofu / cheese on topping.

NOTE: If want to make it gluten free you can avoid broken wheat and can add any other flour to it.

7.

NOTE: If you wish can use any veg puree instead of water to make it more vit n mineral rich.
