Khaman is sometimes confused with dhokla - but it is almost entirely made of chickpeas,where as dhokla is prepared with different ingredients and ratios of chickpeas.Very light and protein rich snack can be carried in lunch box too,as it taste nice at room temperature.....And yes I made it in a traditional way ,ma mom use to make since years,without any twist...:D

  • Yields: serves 4 person
Ingredients
  • For Batter:
  • 2 cup chick Pea flour
  • 2 teaspoon Sugar
  • 1 teaspoon citric acid
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 1/4 cup water
  • 1/2 teaspoon Soda (dissolved in 1/4 cup water)
  • 1 packet Eno-fruit-salt
  • For Tempering :
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 3 green chillies or to taste (slit length wise)
  • few curry leaves
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
  • 1/4 cup water
  • Red Chilli Powder-for sprinkling-as needed (optional)
Method
1.

For Batter:
Mix all ingredients ,mix well in one direction and immediately pour in greased plate,in a hot steamer steam for 15-20 min.or till a knife inserted in the middle comes out clean.Cool it ,sprinkle red chilli powder on it.

2.

For Tempering:
In a pan heat oil,add mustard seeds,as soon as it crackle,add green chillies and curry leaves and put of the flame.now add sugar,lemon juice and water and cover it,pour on the khaman.

3.

Cut and serve with Cut into pieces and serve hot with any chutney or just tomato sauce.

Thx Usha for trying it...yep i think you are right ,but if we steam dhoklas for little bit more time then also,it turns little bit dry,better luck next time.. :-x :-x :-x :-x

Dhoklas came out good. They were little dry. Sould have poured out some more water in the tempering...
